Lentejas: Spain’s Everyday Lentil Stew

There is something deeply comforting about a pot of lentejas simmering on the stove. The kitchen fills with the smell of garlic, onion, paprika, and slow-cooked vegetables, while the lentils soften into a thick, savoury stew. Nothing about it feels fancy, yet a bowl of lentejas can be exactly what you want after a long day.

Across Spain, lentil stew belongs to the world of everyday home cooking. Families make their own versions, changing the vegetables, spices, or meat depending on what they have available. The result is simple, filling food that tastes even better when the weather turns cool.

A Pot That Changes From Kitchen to Kitchen

Lentejas simply means lentils, but the dish can take many forms. A traditional Spanish lentil stew often combines lentils with potatoes, carrots, onion, garlic, tomato, and paprika. Chorizo or another cut of pork may join the pot when cooks want something richer.

There is no single recipe that every Spanish household follows. Some versions stay quite brothy, while others cook down until almost creamy. One family might add a whole carrot and potato, while another chops everything finely so the vegetables almost disappear into the stew.

That flexibility makes lentejas perfect for home cooking. You can work with the ingredients already in your kitchen without losing the heart of the dish.

Start With a Good Base

The flavour of Spanish lentil stew begins long before the lentils become tender. Start by gently cooking onion, garlic, carrot, and tomato in olive oil. Let the vegetables soften rather than rushing them over high heat.

Then comes paprika, one of the seasonings that gives the stew its unmistakable Spanish character. Add it briefly so it perfumes the oil, but do not let it burn. Burnt paprika can quickly turn bitter.

Once the vegetables and seasoning come together, add the lentils and cooking liquid. From there, the pot does most of the work.

Lentils Make It Naturally Hearty

One reason lentejas has remained such a popular everyday dish is that lentils bring plenty of substance without requiring expensive ingredients. They absorb the flavours around them while releasing just enough starch to give the broth body.

Brown or green lentils work particularly well because they hold their shape during a long simmer. Rinse them before cooking, then add them directly to the pot. Unlike some other dried beans, many lentils do not require overnight soaking, which makes this stew especially convenient.

Keep the heat low once the stew begins simmering. A gentle bubble gives the lentils time to become tender without turning them completely mushy.

Chorizo Brings the Spanish Flavour

A few slices of chorizo can completely change the stew. As it cooks, the sausage releases paprika, garlic, and savoury fat into the broth, giving the lentils a deeper colour and richer flavour.

Some cooks also use bacon, pork ribs, or ham. Others leave out the meat entirely and let the vegetables and lentils take centre stage.

If you use chorizo, choose a cooking variety rather than a dry cured sausage when possible. The softer sausage releases its flavour into the broth as it simmers, making every spoonful more savoury.

Let It Simmer Until Thick and Tender

Once everything goes into the pot, lentejas needs little attention. Simmer it gently until the lentils are tender and the potatoes have softened.

Check the liquid occasionally. If the stew becomes too thick before the lentils finish cooking, add a little hot water or stock. On the other hand, if the broth still looks very thin once the lentils are tender, let it simmer uncovered for a few extra minutes.

The finished stew should feel thick and comforting without becoming completely dry. Give it a few minutes to rest before serving so the flavours settle together.

The Kind of Food You Come Back To

Serve lentejas in deep bowls with plenty of the rich broth, tender vegetables, and pieces of chorizo. A slice of crusty bread on the side is perfect for catching whatever remains at the bottom.

The stew also makes excellent leftovers. In fact, many people find that the flavour improves after a night in the refrigerator because the lentils and vegetables have more time to soak up the seasoning.

That is perhaps what makes lentejas such a classic of Spanish home cooking. It does not need a special occasion. It simply needs a pot, a few good ingredients, and enough time for everything to become something warm, hearty, and satisfying.

Lentejas Recipe

Ingredients

  • 250 g brown or green lentils
  • 100 g cooking chorizo, sliced
  • 1 medium onion, finely chopped
  • 2 carrots, chopped
  • 2 medium potatoes, cut into chunks
  • 2 garlic cloves, finely chopped
  • 1 ripe tomato, grated or finely chopped
  • 1 tsp sweet smoked paprika
  • 2 tbsp olive oil
  • 1 bay leaf
  • 1.2 litres vegetable or chicken stock
  • Salt, to taste
  • Black pepper, optional

Method

  1. Build the base: Heat the olive oil in a large pot over medium-low heat. Add the onion, carrots, and garlic. Cook for 5 to 7 minutes until the vegetables soften.
  2. Add the tomato: Stir in the tomato and cook for another 3 to 4 minutes until it becomes thick and concentrated.
  3. Add the paprika: Take the pot briefly off the heat and stir in the paprika. This keeps it from burning while allowing its smoky flavour to spread through the oil.
  4. Add the lentils: Rinse the lentils and add them to the pot along with the potatoes, bay leaf, chorizo, and stock.
  5. Simmer: Bring everything to a gentle boil, then lower the heat. Cover partially and simmer for about 35 to 45 minutes, stirring occasionally, until the lentils and potatoes are tender.
  6. Adjust the consistency: Add a little hot water if the stew becomes too thick while cooking. If it looks too thin once the lentils are ready, simmer uncovered for a few extra minutes.
  7. Season: Taste and add salt and black pepper as needed. Remember that the chorizo can already add plenty of seasoning.
  8. Rest and serve: Remove the bay leaf and let the stew rest for 5 to 10 minutes. Serve hot with crusty bread.
