Gougères: France’s Bite-Sized Cheese Puffs

Walk into a bakery or wine cellar in Burgundy, and you might be greeted with a basket of warm Gougères before anything else reaches the table. Light, airy, and packed with the flavour of melted cheese, these savoury pastry puffs are a beloved part of French cuisine. They may look similar to profiteroles, but one bite quickly tells a different story.

Instead of cream or chocolate, Gougères celebrate cheese. They prove that the same choux pastry used for desserts can create an equally memorable savoury treat.

A Pastry That Begins with Choux

Like éclairs and profiteroles, Gougères start with classic choux pastry. Butter, water, flour, and eggs come together to create a smooth dough that expands through steam as it bakes. You then get a pastry with a crisp shell and a light, hollow centre.

The difference comes before the dough reaches the oven. Generous amounts of grated cheese are folded into the mixture, filling every bite with rich, savoury flavour. Many traditional recipes use Gruyère or Comté, although other hard cheeses also work beautifully.

A little black pepper or a pinch of nutmeg often completes the mixture without overpowering the cheese.

The Perfect Companion to a French Table

Gougères are especially popular in Burgundy, where they are often served as an apéritif before a meal. They pair wonderfully with white wines from the region, making them a favourite at family gatherings, celebrations, and dinner parties.

Their versatility makes them equally appealing. Serve them warm as a snack, alongside soup, with a cheese board, or as part of a festive spread. They disappear quickly because their crisp exterior and soft, cheesy centre are hard to resist.

A Simple Recipe That Rewards Good Technique

Although Gougères use everyday ingredients, they depend on careful baking. The dough must hold enough moisture to create steam, yet remain firm enough to keep its shape. A hot oven encourages the pastry to rise, and allowing the puffs to bake fully helps them stay crisp instead of collapsing.

That balance of texture is what makes Gougères so satisfying. Every puff feels light, airy, and wonderfully cheesy.

Prepare classic choux pastry, then fold grated Gruyère or Comté cheese into the dough until evenly combined. Pipe or spoon small rounds onto a lined baking tray, leaving space between each one for expansion.

Bake at 200°C until the Gougères rise, become golden brown, and develop a crisp shell. Serve warm straight from the oven. You can also cool slightly before enjoying with soup, wine, or as a savoury appetiser.
