Unlike chorizo or Salchichón, Sobrasada remains creamy even after curing, making it ideal for spreading on bread or melting into cooked dishes.

Today, Sobrasada is protected under Protected Geographical Indication (PGI) status as Sobrasada de Mallorca, preserving its authentic production methods and regional identity.

The History of Sobrasada

The story of Sobrasada dates back several centuries.

Although pork preservation has long existed throughout the Mediterranean, the arrival of paprika from the Americas during the 16th century transformed sausage making in Mallorca. Local producers discovered that paprika not only added color and flavor but also helped preserve the meat during curing.

Over generations, Mallorcan families refined the recipe, combining premium pork with paprika and slow air-drying to create the spreadable sausage that remains a symbol of the island today.

Many traditional households still prepare Sobrasada during the annual pig slaughter season known as matança.

Each variety differs mainly in size, curing time, and texture.

Sobrasada in Mallorcan Cuisine

Sobrasada is one of the most versatile ingredients in Balearic cooking.

It is commonly enjoyed:

Whenever I visit Mallorca, one of my favorite breakfasts is toasted country bread topped with warm Sobrasada and a drizzle of local honey. The combination perfectly balances richness, sweetness, and spice while capturing the island’s culinary spirit.

  • 150 g Sobrasada
  • 4 thick slices of rustic country bread
  • 2 tablespoons honey

Instructions

  1. Toast the bread until lightly crisp.
