Although kidney beans originated in Central and South America, they found a second home in India centuries ago. Over time, Indian cooks transformed them into a rich, comforting curry that has become a staple in countless households.

The dish is most commonly enjoyed with steamed basmati rice, creating the classic combination known as Rajma Chawal. This pairing is so iconic that many families consider it the ultimate comfort meal.

A Dish with a Fascinating History

The story of Rajma begins far from India. Kidney beans were introduced to the Indian subcontinent after European traders brought crops from the Americas during the Columbian Exchange.

Indian cooks quickly embraced the ingredient, adapting it to local tastes by combining it with onions, tomatoes, ginger, garlic, and a carefully balanced blend of spices. The result was a dish that felt completely at home in Indian kitchens.

  • Finish with fresh coriander and a small knob of butter, if desired.

Authentic Rajma Recipe

Ingredients

  • 1 cup dried red kidney beans (rajma)
  • 4 cups water (plus extra for soaking)
  • 2 tablespoons vegetable oil or ghee
  • 1 teaspoon cumin seeds
  • 1 large onion, finely chopped
  • 2 teaspoons ginger-garlic paste
  • 2 medium tomatoes, pureed
  • 2 green chilies, slit (optional)
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons chopped fresh coriander
  • 1 tablespoon butter (optional)

Instructions

  1. Wash the kidney beans thoroughly and soak them overnight in plenty of water.
  2. Drain the soaked beans and pressure cook them with fresh water until tender, about 25–30 minutes. If using a regular pot, simmer until the beans are soft.
  3. Heat the oil or ghee in a deep pan. Add the cumin seeds and let them crackle.
  4. Add the chopped onion and sauté until golden brown.
  5. Stir in the ginger-garlic paste and cook for one minute.
  6. Add the tomato puree and green chilies. Cook until the oil begins to separate.
  7. Mix in the turmeric, red chili powder, coriander powder, cumin powder, and salt.
  8. Add the cooked beans along with some of their cooking liquid. Stir well.
  9. Simmer over low heat for 30–40 minutes, stirring occasionally. Mash a few beans against the side of the pan to naturally thicken the gravy.
  10. Finish with garam masala, butter (if using), and chopped coriander.
  11. Serve hot with steamed basmati rice, jeera rice, naan, or chapati.

Serving Suggestions

Rajma tastes best with steamed basmati rice, sliced onions, lemon wedges, and homemade pickle. A bowl of plain yogurt or cucumber raita makes the meal even more refreshing.
