There’s mashed potato, and then there’s Pommes Aligot. Creamy, buttery, and wonderfully stretchy, this iconic French dish combines smooth mashed potatoes with melted cheese to create one of the most comforting foods in French cuisine. Lift a spoonful, and long ribbons of cheese stretch dramatically from the pot – a signature that makes Aligot instantly recognisable.

Originating in the Aubrac region of southern France, Pommes Aligot has been warming tables for centuries. Once a simple meal prepared by monks for pilgrims travelling through the mountains, it has evolved into one of France’s most beloved potato dishes.

The Secret Behind Its Incredible Stretch

What makes Pommes Aligot so unique is its texture. After the potatoes are mashed until perfectly smooth, they are blended with butter, cream, garlic, and generous amounts of Tomme fraîche d’Aubrac, a fresh cheese traditionally used for Aligot.

As the mixture is stirred, the cheese melts into the potatoes, creating long, silky strands that give the dish its famous stretch. The potatoes must be smooth and hot, while the cheese is added gradually to achieve the perfect consistency.

If Tomme fraîche isn’t available, cheeses such as mozzarella blended with Gruyère or Cantal can produce a similar stretchy effect.

A Comfort Food Made for Sharing

Pommes Aligot is traditionally served alongside grilled sausages, roast meats, duck, or braised beef, but it is just as satisfying on its own. Rich, creamy, and deeply comforting, it has become a favourite in both rustic mountain inns and modern French restaurants.

Simple ingredients, careful technique, and exceptional cheese transform an everyday potato into a truly unforgettable dish.

Let’s make Pommes Aligot

Ingredients

  • 1 kg floury potatoes, peeled and chopped
  • 250 g Tomme fraîche d’Aubrac (or mozzarella and Gruyère), grated
  • 100 ml heavy cream
  • 50 g butter
  • 2 garlic cloves, minced
  • Salt and black pepper

Method

  1. Boil the potatoes until tender, then drain well and mash until completely smooth.
  2. Warm the cream with the butter and garlic, then stir it into the mashed potatoes.
  3. Add the grated cheese gradually, stirring continuously until it melts and forms long, stretchy ribbons.
  4. Season with salt and black pepper.
  5. Serve immediately while hot with grilled sausages, roast meats, or vegetables.
