Mayonnaise is one of the most versatile ingredients in a kitchen. Cooks should think of it not only as a spread or binder, but as an ingredient that adds fat, acidity, and emulsification to both cold and cooked dishes. Uncooked ingredients like boiled eggs, tinned tuna, cabbage, shredded chicken, or raw vegetables take well to mayo because it binds and enriches them. Cooked ingredients—roasted potatoes, grilled corn, fried tofu, steamed broccoli—gain creaminess and flavour when combined with mayo.

You can also cook with mayonnaise. Because it contains oil and egg, it browns beautifully, keeps meat moist, and helps form a crust. Mayo-baked fish, mayo-roasted vegetables, and even mayo-spread toast use these properties to great effect.

Here are 10 simple, reliable recipes showcasing how mayo can transform everyday ingredients.
