Ingredients

  • 200g granulated sugar
  • 90g high-quality salted butter (cubed, preferably Breton)
  • 120ml heavy cream (warmed)
  • 1/2 tsp fleur de sel (plus extra to taste)

Step-by-Step Instructions

1️⃣ Melt the Sugar

  • In a heavy saucepan, heat sugar without stirring over medium heat. Swirl occasionally until it melts into an amber liquid (~5-7 mins).

2️⃣ Add Butter

  • Carefully whisk in butter (mixture will bubble vigorously) until fully incorporated.

3️⃣ Incorporate Cream

  • Slowly pour warm cream while whisking constantly. Simmer for 1-2 minutes until smooth.

4️⃣ Season & Cool
